The Chablis Grand Cru site Les Blanchots is next to the famous Les Clos. It is cooler than this and the Blanchot harvest usually only begins when the neighboring site has already been harvested.

The name Blanchots is probably derived from Blanc (= white), as there is a lot of light limestone in the soil here. This is why this Cru is said to be very elegant, a Chablis with purity and finesse, but which also has warm components such as a full body.

The Domaine Billaud-Simon owns a modest 0.18 hectares in this site, which is only 12.7 hectares in size. The harvest is done by hand, and the berries are then selected again on the sorting table so that only the best material is used for this Chablis Grand Cru. The aging takes between 15 and 18 months and takes place mainly in steel tanks, a small part comes from wooden barrels.

The warm and ripe 2022 vintage produced a great Les Blanchots at Billaud-Simon. It has a light color with golden-green reflections. Its scent is elegant, delicate with acacia and linden blossoms, plus a fine note of citrus fruits. Everything seems crystal clear and mineral. On the palate it is rich for a Chablis, dense, grippy and with impressive length in the finale.
