The Fine White Port is the sweet version of the white port wine from Quinta do Noval. The grape varieties Malvasia Fina, Gouveio, Rabigato and Códega come from the Dour Valley and are half fermented with the skins to give the wine a certain tannin structure that counteracts the sweetness. The wines are then aged for two to three years in used wooden barrels and stainless steel tanks before the final cuvée is put together.
When it comes to describing the wine, let's let the technical director of Quinta do Noval have his say. Carlos Agrellos writes about the Fine White Port: "It has a yellow-gold color and a fruity bouquet. In the mouth it is sweet, fine, smooth, with a good balance and good aromatic persistence. It is an excellent port wine for an informal aperitif. Serve chilled."
Incidentally, it is also perfectly legitimate to serve white port "on the rocks" as an aperitif.
